Once upon a time, all gas ranges had open burners. Under the burner grate, you could see a blue flame, which you turned up or down depending on your desired cooking temperature. Numerous technological advances in stovetops now mean you can have a closed gas burner, which is covered with a thick glass or ceramic plate, forming a smooth surface for cooking. Which is better for you largely depends on your aesthetics, how you cook and what you want to spend on a stove.

The look of your range is a personal choice. If you’re a traditionalist, you may prefer the look of an open gas range with its visible fire under cast-iron grates. Many design-savvy cooks seek out the newer, more modern looking closed burners, which can suit an assortment of kitchen designs and add elegance and interest to the kitchen.

Cooking
Walk into a professional kitchen, and you will see the flicker of blue flame popping out of open gas burners. That’s because the open burners allow for faster and more precise cooking results. The secret is in the air flow around the flame, which allows the heat to spread evenly and quickly under the pan. Flash, high-heat cooking with a wok requires an open burner. In contrast, the closed burners restrict that free flow of air, so generally heat up less quickly and more unevenly.  

Cleaning
The closed burners are a snap to clean after each use. Wipe a soft cloth over the surface and you are done. The open burners are another story. When foods or liquids overflow they can get stuck on the grate or ooze into the drip pan, which may need to be removed and scrubbed clean. One drawback of the closed burner is that you need to be careful not to scratch the surface with abrasives or scrubber sponges. What’s more, with wear and tear, the surface can develop brownish rings that are difficult to remove.

Efficiency
There is not much difference in energy use between open and closed gas burners. Open gas burners, however, offer a strong heat output per unit of gas used, and the quicker heating times may mean less use of gas overall.
Cost
Closed burners tend to be pricier than the typical open burner range. You need to be careful not to drop heavy objects on a closed burner range, because it can break or crack more easily. If you have a glass-top closed burner, keep in mind that your pots need to be unpainted and smooth on the bottom to avoid discoloration and scratching.
